How to use it
- 1Soak ½ teaspoon of crystals in a cup of cold water overnight, or for at least 4 hours.
- 2The crystals will swell into a soft, clear gel. Discard any water that has not been absorbed.
- 3Stir the gel into cold milk, sharbat, lemon water or falooda.
- 4Never eat the crystals dry — they must be fully soaked first.

How do you soak gond katira?
Put about half a teaspoon of crystals in a cup of cold water and leave it overnight, or for at least four hours. The crystals absorb the water and swell into a soft, translucent gel roughly ten times their original volume. Drain any excess water and stir the gel into a cold drink.
Can I soak it in warm water to speed it up?
No. Gond katira needs cold water and time. Warm water makes it clump and it will not set into a proper gel.
How much does a 200g pack make?
A great deal. Half a teaspoon makes a single serving, so a 200g pack is many months of daily use in summer.
